---------------------------------------------------------------- Spaghetti Sauce ---------------------------------------------------------------- Ingredients: 2 lbs canned tomatoes 6 tbsp extra virgin olive oil 1 cup diced onions 1/2 cup diced carrots 1 1/2 tsp salt 1 tsp fresh pepper 5 basil leaves medium sliced into strips 1 lb lean ground beef 1/2 cup mushrooms sliced Optional: 1 minced garlic clove Directions: - Chop tomatoes into small pieces and use conical sieve or food mill to make sauce. - In a saute pan at medium heat sweat onions in olive oil. (3 minutes) - Add carrots to saute pan for until onions become translucent. Add the optional garlic. (5-6 minutes) - Add meat, salt, and pepper to saute pan until meat is cooked. (10-12 minutes) - Add tomato sauce and mushrooms to saute pan and stir. - Raise heat until the sauce comes to a boil. - Reduce heat to simmer the sauce. - Partially cover saute pan and let simmer for 40 minutes. - Add sliced basil, and return the lid to simmer for 5 minutes.
